Summer Salmon Salad

Ingredients
6 oz can wild Alaskan sockeye salmon
2 tbsp stone ground Dijon mustard
1 celery stalk, minced
1 green onion diced
1-2 rainbow carrots, sliced
Black pepper to taste
Directions
Chop celery, onions and carrots
Gently mix all ingredients
Enjoy on a bed of spring greens
